As fresh as a north wind, the Brise Nordique is a global salad that combines the mild flavour of quinoa with the oceanic notes of marinated salmon. Beetroot, orange-infused fennel, edamame beans and gomasio come together to create a colourful, light and characterful dish — perfect for a lunch break with a twist.

The star of this salad is the salmon, marinated in a homemade wok sauce — rice vinegar, sesame oil, soy sauce, garlic and fresh herbs — which gives it its deep umami notes and delicate aroma. The orange-flavoured fennel, meanwhile, adds a touch of tangy freshness that elegantly balances the dish.
