Chocolate lilies: an original gift idea for a sweet-toothed May Day

1 May is fast approaching, and with it comes the lovely tradition of giving a sprig of lily of the valley as a token of good luck. This year, why not give something a little more indulgent? At Pain d'Antan, we’ve created a lily of the valley made entirely from artisanal chocolate – as beautiful to look at as it is to eat, and guaranteed to bring… chocolatey happiness.

The chocolate lily of the valley: a tradition reinvented

Giving lily of the valley on 1 May is a deeply rooted custom in Belgium. A symbol of renewal and happiness, lily of the valley is given to friends, family and colleagues. And Le Pain d'Antan wanted to reinvent this tradition with the chocolate lily of the valley, which combines floral symbolism with the art of artisanal chocolate-making.

This is not just a sweet treat. It is a creation that requires true expertise: faithfully reproducing the shape and colours of a flower in chocolate, using high-quality ingredients and natural colourings, is the hallmark of fine chocolate-making.

A hazelnut praline containing 77% hazelnuts

At the heart of the lily of the valley is a homemade hazelnut praline made up of 77% hazelnuts. To understand just how remarkable this is: a standard praline often contains 40 to 50% nuts, with the rest being sugar. With 77% hazelnuts, what we have here is, above all, a pure, dense and deeply aromatic hazelnut paste.

The result: an intense, authentic flavour, with no artificial sweeteners. From the very first bite, you recognise the hazelnut – the real thing.

Three chocolates, three textures

Surrounding this praline, three chocolates complement one another:

  • Milk chocolate, smooth and rounded, adds richness
  • White chocolate, creamy and vanilla-flavoured, brings a touch of sweetness
  • Dark chocolate, intense and slightly bitter, anchors the whole with depth

This trio creates a multi-layered taste experience: sweetness first, then character, followed by the lingering aroma of the hazelnut.

Crispearls: the little crunchy secret

Scattered throughout the composition, Crispearls (small balls of puffed cereal coated in milk or dark chocolate) provide a light, airy crunch that contrasts with the melt-in-the-mouth praline. It makes for a truly surprising tasting experience.

It’s a fair question. A bouquet of lily of the valley is lovely, but rather commonplace. A chocolate lily of the valley is a rarer, more unexpected gift that breaks the mould without sacrificing the symbolism. The recipient immediately recognises the care that went into the choice.
